Ingredients
    For the Meatballs:
  • 1 lb ground beef (80/20 recommended)
  • 1/4 cup almond flour
  • 1 egg
  • 2 green onions, finely chopped
  • 1 clove garlic, minced
  • 1/2 tsp ground ginger
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • For the Keto Teriyaki Sauce:
  • 1/4 cup tamari or coconut aminos
  • 2 tbsp water
  • 1 tbsp rice vinegar
  • 2 tbsp erythritol or monk fruit sweetener
  • 1 clove garlic, grated
  • 1/2 tsp grated fresh ginger
  • 1/4 tsp xanthan gum
  • For the Sesame Cauliflower Rice:
  • 3 cups riced cauliflower (fresh or frozen)
  • 1 tbsp sesame oil
  • 1 clove garlic, minced
  • Salt to taste
  • Optional: sesame seeds, chopped green onion
Instructions
    Make the Meatballs:
  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. Mix ground beef, almond flour, egg, green onions, garlic, ginger, salt, and pepper in a bowl.
  3. Form into 16 meatballs and place on the baking sheet.
  4. Bake for 15–18 minutes or until cooked through.
  5. Make the Teriyaki Sauce:
  6. In a saucepan, combine tamari, water, rice vinegar, sweetener, garlic, and ginger. Simmer for 3–4 minutes.
  7. Whisk in xanthan gum until sauce thickens. Remove from heat.
  8. Glaze the Meatballs:
  9. Toss cooked meatballs in the warm sauce until coated.
  10. Make the Cauliflower Rice:
  11. Heat sesame oil in a skillet over medium heat.
  12. Sauté garlic for 30 seconds, then add cauliflower rice.
  13. Cook 5–7 minutes until tender. Season with salt.
  14. Serve:
  15. Scoop cauliflower rice into bowls, top with glazed meatballs, and garnish with sesame seeds and green onion if desired.
