Description

Chunks of marinated paneer (Indian cottage cheese) are grilled or roasted alongside colorful veggies, then paired with a sugar-free mint-cilantro chutney for a vibrant, satisfying keto dish packed with flavor and protein.

Ingredients
    For the Paneer Tikka:
  • 14 oz 14 paneer, cut into 1-inch cubes
  • 1/2 cup full-fat Greek yogurt
  • 1 tbsp lemon juice
  • 1 tbsp avocado oil
  • 1 tsp ground cumin
  • 1 tsp garam masala
  • 1 tsp smoked paprika
  • 1/2 tsp turmeric
  • 1/2 tsp chili powder (adjust to taste)
  • 1/2 tsp salt
  • 1 bell pepper, cut into chunks
  • 1/2 red onion, cut into chunks
  • Skewers (soaked in water if wooden)
  • For the Mint Chutney:
  • 1 cup fresh mint leaves
  • 1/2 cup fresh cilantro
  • 1 green chili (optional, for spice)
  • 1 clove garlic
  • 1/2 of Juice lime
  • 2 tbsp plain Greek yogurt
  • 1 tbsp water (adjust as needed)
  • Salt to taste
  • Pinch of erythritol or monk fruit sweetener (optional)
Instructions
    Marinate the Paneer:
  1. In a bowl, whisk together yogurt, lemon juice, oil, and all the spices.
  2. Add the paneer cubes and toss to coat evenly.
  3. Cover and marinate for at least 30 minutes or overnight for more flavor.
  4. Prepare the Chutney:
  5. Blend mint, cilantro, green chili, garlic, lime juice, yogurt, sweetener, and salt in a food processor.
  6. Add water as needed for consistency.
  7. Adjust seasoning to taste and chill until ready to serve.
  8. Assemble and Cook:
  9. Preheat oven to 425°F or grill to medium-high heat.
  10. Thread the marinated paneer, bell peppers, and onions onto skewers.
  11. Roast on a baking sheet or grill, turning halfway, until paneer is golden and veggies are slightly charred (about 15–20 minutes).
