Ingredients
    For the Steak Bites:
  • 1 lbs 1.5 ribeye or sirloin steak, cut into 1-inch cubes
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tbsp fresh parsley, chopped (for garnish)
  • For the Creamy Spinach & Mushrooms:
  • 1 tbsp butter
  • 8 oz mushrooms, sliced
  • 2 cups fresh baby spinach
  • 1/2 cup heavy cream
  • 1/4 cup grated parmesan cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional for spice)
Instructions
    Prepare the Steak Bites:
  1. Pat the steak cubes dry with a paper towel, then season with salt, black pepper, smoked paprika, and garlic powder. Toss to coat evenly.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add steak bites in a single layer and sear for 2-3 minutes per side, until browned and slightly crisp. Do not overcrowd the pan—work in batches if needed.
  4. Reduce heat to medium, add butter and minced garlic, and stir the steak bites for 30 seconds until fragrant. Remove from heat and transfer steak to a plate.
  5. Make the Creamy Spinach & Mushrooms:
  6. In the same skillet, melt butter over medium heat. Add sliced mushrooms and sauté for 5 minutes, until soft and slightly golden.
  7. Stir in baby spinach, cooking until wilted.
  8. Pour in heavy cream, then add parmesan, salt, black pepper, and red pepper flakes. Simmer for 2-3 minutes until thick and creamy.
  9. Serve & Enjoy:
  10. Plate the creamy spinach and mushrooms, then top with steak bites.
  11. Garnish with fresh parsley and serve warm!
