These low-carb buffalo chicken meatballs are the perfect balance of heat and comfort, served with a crisp celery slaw and blue cheese dressing. Ready in under 30 minutes and only 4g net carbs per serving.

Ingredients
    For the Meatballs:
  • 1 lb ground chicken
  • 1/4 cup almond flour
  • 1/4 cup finely chopped green onion
  • 1 egg
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • For the Buffalo Sauce:
  • 1/3 cup Frank’s RedHot or other buffalo-style hot sauce
  • 2 tbsp unsalted butter, melted
  • For the Celery Slaw:
  • 1 1/2 cups thinly sliced celery
  • 1/4 cup crumbled blue cheese
  • 2 tbsp mayonnaise
  • 1 tbsp sour cream
  • 1/2 tbsp lemon juice
  • Salt & pepper to taste
Instructions
    Make the Meatballs:
  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. In a bowl, mix ground chicken, almond flour, green onion, egg, and seasonings.
  3. Roll into 16 meatballs and place them on the baking sheet.
  4. Bake for 14–16 minutes, until fully cooked and lightly golden.
  5. Make the Buffalo Sauce:
  6. While meatballs cook, whisk together hot sauce and melted butter.
  7. When meatballs are done, toss them gently in the sauce until well coated.
  8. Make the Celery Slaw:
  9. Combine sliced celery, blue cheese, mayo, sour cream, lemon juice, and a pinch of salt and pepper in a bowl.
  10. Stir to combine and chill until serving.
  11. Serve:
  12. Plate meatballs with a scoop of slaw on the side. Drizzle with extra buffalo sauce or a few more crumbles of blue cheese if you’re feeling bold.
