Keto Bacon Cheeseburger Casserole

This casserole is everything we love about a classic bacon cheeseburger—juicy beef, crispy bacon, melted cheddar, and tangy pickles—all baked into one bubbling, crave-worthy dish. It’s rich, comforting, and hits that fast-food nostalgia in a way that’s surprisingly keto-friendly.

We first came up with this recipe on a night when we were seriously craving a cheeseburger but didn’t want to deal with lettuce wraps or dry keto buns. We tossed together all our favorite burger ingredients, layered them into a casserole dish, added a creamy, cheesy topping, and popped it in the oven. The result? A low-carb dinner that instantly became a weeknight staple.

It’s hearty, satisfying, and super customizable. You can add onions, mustard, even chopped pickles right into the mix if you're feeling it. It’s also one of those meals that’s even better the next day—if you’re lucky enough to have leftovers. Whether you're making it for family dinner or just meal prepping for the week, this casserole always delivers big flavor and cozy vibes.
