Ingredients
    For the Chicken:
  • 4 boneless, skinless chicken breasts
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp tsp paprika
  • 2 tbsp olive oil
  • 2 tbsp butter
  • For the Sauce:
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup cup chicken broth
  • 1/2 cup grated parmesan cheese
  • 1/2 cup cup sun-dried tomatoes, chopped
  • 1 tsp Italian seasoning
  • 2 cups fresh spinach
  • 1/4 tsp red pepper flakes (optional, for a little heat)
Instructions
  1. Prepare the chicken: Season the chicken breasts with salt, pepper, and paprika on both sides.
  2. Sear the chicken: Heat olive oil and butter in a large skillet over medium heat. Add the chicken breasts and cook for 5-6 minutes per side, until golden brown and cooked through. Remove from the pan and set aside.
  3. Make the sauce: In the same skillet, add the minced garlic and sauté for about 30 seconds, until fragrant. Pour in the chicken broth and use a wooden spoon to scrape up any browned bits from the pan.
