Ingredients
    For the Crispy Chicken Thighs:
  • 4 bone-in, skin-on chicken thighs
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1 tbsp olive oil
  • 1 tbsp butter
  • For the Cheesy Cauliflower Rice:
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 4 cups cauliflower rice (fresh or frozen)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp paprika
  • 1/2 cup heavy cream
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp fresh parsley, chopped (for garnish)
Instructions
    Step 1: Cook the Chicken Thighs
  1. Pat the chicken thighs dry with a paper towel and season both sides with salt, pepper, paprika, and garlic powder.
  2. Heat a large skillet over medium-high heat and add olive oil. Once hot, place the chicken thighs skin-side down in the pan.
  3. Sear for 6-7 minutes, without moving, until the skin is golden and crispy. Flip and cook for another 6-8 minutes until the internal temperature reaches 165°F (75°C). Remove from the pan and let rest for 5 minutes.
  4. Step 2: Make the Cheesy Cauliflower Rice
  5. In the same skillet, reduce heat to medium and add butter. Stir in the minced garlic and cook for 30 seconds until fragrant.
  6. Add the cauliflower rice, salt, pepper, and paprika, and sauté for 3-4 minutes until softened.
  7. Pour in the heavy cream and bring to a simmer, stirring frequently.
  8. Add the cheddar cheese and Parmesan, stirring until melted and creamy.
  9. Remove from heat and garnish with fresh parsley.
  10. Step 3: Serve
